6min Vanilla Pudding

With two months till our little girl arrives I'm getting very excited. However in the mean time I'm quiet enjoying having a reason to eat so many delicious goodies.. cravings you know I just have to ;o)
And so today I wiped up a 6 Minute Vanilla Pudding as I wanted a variation from the quick chocolate pudding in a mug that I'm sure we all know and love.


So as I love to share here is the recipe for you to enjoy. Thanks to being an ex Tupperware demonstrator it is a Tupperware recipe so please excuse the Tupperware talk...


Tupperware 6 Minute Vanilla Pudding

Ingredients
3/4 cup marmalade jam
2 tbs golden syrup
100g butter, softened
2/3 cup castor sugar
2 large eggs
1 vanilla bean or 1 tsp vanilla extract
1 cup self raising flour
1/2 cup dessicated coconut
1/4 cup milk

Method
1. Lightly grease Tupperwave 1 Litre Jug and combine the marmalade and syrup in the base using the TupperChef Spatula.

2. Using electric beaters, cream the butter and sugar in the Bake 2 Basics Small Bowl until light and smooth. Beat in the eggs one at a time. Transfer the mixture to the Bake 2 Basics Large Bowl.

3. With the TupperChef Kitchen Scissors cut the vanilla bean in half lengthwise and gently scrape out the seeds using the TupperChef Paring Knife. Add seeds or extract to the creamed butter mix.

4. Sift the flour with the Bake 2 Basics Sift 'N Store into the creamed butter mixture. Gently fold in the coconut and milk through this mixture.

5. Pour the mixture over the marmalade syrup. Cover, elevate and microwave on high (800 watts) for 6-8 minutes.
6. Stand for 5 minutes before turning out of the Jug. Serve immediately with cream/ice cream/custard.

Our Boys Bedroom Redo

Having been inspired by so many of the wonderful bloggers I follow I finally decided it as time to reorganise our little mans bedroom. Where to start is always my problem however this time around I started with a list. A list of items that I would need to buy in order to achieve an eye pleasing room. I had been taking mental notes from the wonderful Jade at Super Organised Mum for quite some time as I had drooled over her kids rooms and so the list was relatively easy. It was just a matter of slowly gathering all the supplies needed.. a trip to the beloved stores such as Target, Ikea and Spotlight would fix this.

And so I started... and I remembered to take a before pic for you all to see this time :0)

First I cleared out all the toys... and boy does our little man have a truck load of toys! Especially soft toys. So out came the 'To Charity' box and with the approach of one stays and one goes the toys were decluttered.



Next I rearranged the furniture and just by doing that I was so pleased at how better this space already looked.
*I have plans to update the old set of draws seen here but that's another project for another time!

The next task was to hit the wardrobe. I went through all LJ's cloths and got rid of anything that does not fit or he simply does not wear. I printed off labels as to the order the clothes were to go back (idea from Jade) and am hoping this will also help hubby stay on the same page as me.


On the RHS of the wardrobe we have our space for hanging. I'm a big fan of hanging up as many cloths as possible thus reducing my time on folding washing. However in saying this due to limited hanging space there are some things that I can not hang and these have been placed in the hanging storage.

Now I had searched for some hanging storage for quiet some time and think hubby became a little tired of me winging about not being able to purchase white hanging storage at a reasonable price.. lol poor hubby. Finally I came across blue and white hanging storage at my local $2 shop and so I decided they were eye pleasing enough to be used ;0) I purchased a matching set one for clothing and one for shoes. Such items as spare coat hangers, singlet tops, shorts, pj's, swimming gear and dressing gown are all stored here. I also used labelled on each shelf here so things go back where they belong.


Below the hanging space is where we will keep our little mans toys. All sorted for one box each day to come out and be played with and put away. (I'll go into detail in a later post to show you what I've done there).

Next out came the Ikea boxes to be put together. They fit perfectly in our built in shelving and are so easy to put together. In them I have stored (from bottom to top) a.Cloths to grow in to, b. Books and c.Memorabilia. With the top shelf being our nappy changing station consisting of our B-Box that holds a few nappies, wipes and disposable bags. I also have cream and antibacterial gel in the little blue box next to the b-box, well up high out of little fingers reach.

Now all that was let to do was the fun part... sprucing up the room with some deco items. YAY.. my favourite bit!

First up went the wonderful Ikea hanging tube and in went all LJ's soft toys. Next I up went the white box shelving that I purchased from Kmart. To these I added some of our precious soft toys and accessories.

To finish off the wall I popped up some pictures I purchased off eBay


Below I added a little reading nook where LJ can sit on his Caterpillar pillow pet and read some books

And there we have it.. LJ's room is done

And I must say I'm very happy with what I've done!

Sticky Date Pudding Delight

Now I'm usually not a fan of the Sticky date pudding as I'm a huge chocolate fan and so have plenty of other alternates to eating sticky date. However this recipe is an exception and you simply MUST try it!

I cannot take credit for such a delight. Friends of ours had us over for dinner and Mr Chef cooked up a delightful dinner as always but it was the desert this time around that simply knocked my socks off. It was so light and moist and full of flavour. So I practically begged for the recipe and hounded him until he gave in ;0)

The first time using this sticky date pudding recipe I discovered how amazing it was.  It turned out wonderfully and it was so easy to make. Everyone I have made it for since loves it and so with it being just to delicious for me to keep to myself here it is for you all to enjoy..

Ingredients (serves 8)
©       250g pitted dates, chopped
©       1 teaspoon bicarbonate of soda
©       1 1/2 cups boiling water
©       125g butter, softened
©       1 cup brown sugar
©       1 teaspoon vanilla extract
©       2 eggs
©       1 3/4 cups White Wings Self-Raising Flour, sifted
©       Caramel sauce
©       1 cup brown sugar
©       300ml thickened cream
©       1/2 teaspoon vanilla extract
©       60g butter

Method
  1. Preheat oven to 180°C. Grease and line the base of a 7cm deep, 22cm (base) cake pan.
  2. Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes.
  3. Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs (1 at a time) beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined.
  4. Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.
  5. Make sauce Combine all ingredients in a saucepan over medium heat. Cook, stirring often, until sauce comes to the boil. Reduce heat to medium-low. Simmer for 2 minutes.
  6. Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over warm pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining sauce.

Love Note Gone Wrong

My hubby and I recently had been going through a tough time where our communication broke down. As life gets busier work and daily stresses grew hence we had little time for us and so as a consequence our relationship went into a spinning downward tumble. It was not till hubby started sleeping on the couch that I suddenly realised that we were in trouble... This I quickly changed! We scheduled in a time to sit and have a d&m after our little man went to bed. Thankfully we opened up to each other, being very honest and now everything is great! And yes I say great. It is like were back to the place when we were newlywed's. Were considering each other and taking time to show that we care. Its amazing what a simple rub of the hand, quick peck on the cheek or rub on the back does. And so life is good once again.
I then awake one morning to find that hubby had grafted my new whiteboard in the kitchen with this gorgeous loving gesture...

So sweet! So I a few days later I thought I would reply to this with my very own little gesture of love. Being a girl who always wants to be clever with wording but always gets a brain freeze I just got straight to the point...

A few more days went past and nothing was said and neither gestures had been removed so every time I opened the pantry or walked past our fridge I smiled. Little did I know how much that smile would change until this morning when I get woken up at 5am by hubby apologising profusely.

Hubby had gone to the fridge to write yet another love note...
As he started to write he realised that the marker he was using was thinner than the one I had used... on a second glance he discovered that he was actually using the permanent marker we keep for the shopping list below the new Ikea white board magnets. Oops...
As he kept on apologising I laughed and laughed... shrugging it off.. no prob hun I can get it off - don't stress. So I first try the old trick of going over the permanent with the whiteboard marker then rub it off..


I scribbled over it a second time to see if I could remove it better...


Still a trace of what was written and so out came my beloved eucalyptus...

I rub over it and all the traces of marker are gone.... however Hubby has presses so hard when writing that there is a permanent indentation! 


Oh.. hubby will be so disappointed tonight when I tell him that he has permanently indented my brand new Ikea whiteboard magnet.. did I mention I just bought them on sat..lol.

I on the other hand will now permanently be reminded of what hubby did and it will consistently make that smile turn into a laugh every time I go past our fridge!

Getting ready for our girl

As baby #2’s arrival is fast approaching I decided to get organised and this meant one thing a complete overhaul of the master bedroom. 

Yes we live in a three bedroom home: Master bedroom, Bedroom 2 is our 22 month old boy’s room and Bedroom 3 is our very embarrassing chuck and shut room. And by embarrassing I mean I cannot even walk into the room! Hence bedroom 3 is just not a possibility for our new bundle of joy and as there are no plans of moving house at this point in time so our little girl will be joining us in our master quarters at least for now.

I always find it so hard to know where to begin and so put off a lot of to do’s for that very reason however this is just something that I have to get done. So why not start with the fun part of setting up bubs crib and getting inspired then to do more.
So I searched eBay and bought this gorgeous crib for a bargain of $25. It worked as soon as bubs crib went up I could not resist I had to do more.


So some shopping was in order and off to our wonderful local Target store I went to pick up some new bedding. Whilst I was there I found some fantastic white baskets on sale. So into the trolley they also went. Once back at home I just had to set up the change table next (this one we already had from bubs #1).

I find change table mat covers so expensive for what they are so instead I use cheep fitted crib sheet. On the first row I placed 3 of the target baskets. The first is holding towel nappies (revamped into cute burp cloths – post to come), with the other two baskets are holding the small cloths items such as socks, singlets, bibs and booties. I placed our blankets and wraps on the bottom of the change table so they are easily accessible.
I then had to find somewhere for all the baby cloths we had been given and so an overhaul of our wardrobe was in order. (I forgot the before pic..ops). I started by going through all me cloths and to my surprise I was able to give away a lot of items, 2 garbage bags full that I no longer wore or had outgrown. Having kids does this to you I guess.. lol
Organisation then began...



I moved all of our cloths to the back wall in the wardrobe as having bubs cloths closest to the door would work for me best. I put an old coffee table that we were no longer using below our cloths to gain shelf space for our jumpers and shoes. At the top of the wardrobe I put my shoes into shoe boxes and stacked on top. I then have my jewellery box, perfume box and hair accessories bag stored in there as our en suite is quite small. The large pink suitcase stores my wedding dress, I know I should get it stored properly its on my to do list when money allows. The green bag holds hubby's toys, his remote control car, helicopter and tank – don’t ask!



 
The right of the wardrobe is where I had cleared all the space for bubs cloths along with my maternity clothes for now.  At the top I have used IKEA DRONA boxes to store all the larger cloths for her to grow into.

As these box will be constantly changing I thought of re using some size labels of cloths instead of printing labels.

I like to hand up all our cloths as this reduces my work load by not having to fold cloths to put away. I simply just hang them up and this also allows me to see everything at a quick glance. As our little miss already has SO many cloths I was in need of more hanging space. So making do with what I had laying around I grabbed some twine and a rod and made a quick second rail. Under all her cloths I will store the baby car capsule when not in use.


I will be adding some gorgeous cloth divides but for now I’m happy with what I’ve done. And so there we have it I’m all set for our little girl’s arrival in July.

A Mothers Day Lesson

We all pretend that it is just another day however deep down we all really want to be shown that were loved and appreciated for all that we do. We make it easy for our hubby’s to do so by giving subtle hints of gifts that we would perhaps like or by doing the not so subtle thing of leaving the catalogue on the bench with the big black marker circling particular items. This year being my second year as a mother myself I thought I would make it easy for hubby and just tell him that I would like the “Surrounded by Love”  willow tree statue to add to our collection. So all was good.




Mother’s day comes and the first thing I have to laugh at is hubby trying to convince our 22 month old into the lounge to come write on mummy’s card.... Oh gosh I thought he has not even been able to write on the card before the day perhaps expecting a present is too much to ask..lol

Anyways I get a great card saying to do nothing all day just like dad.. very funny! I then get given blueberries, a bottle of pancake mixture and a tin of Chi Tea. Cool breakfast – yum! I then receive a bunch of flowers along with an explanation of “I know were watching our money at the moment so I didn’t want to spend too much”. Hubby then goes on to say excitedly that “the flowers were only $20 and how nice are they”. I gratefully goo and gar over the bunch of flowers and hubby goes off happily to make me blueberry pancakes for breakfast.

Now I know I should be grateful for getting anything at all however I just could not stop thinking $10 that is all it would have taken! The Willow tree statue I REALLY wanted would have been $10 more than the flowers. Bad of me I know but really $10 are we watching our money that much!!  

I then start of thinking of all the mothers out there that get presents each year that they really don’t want or the mums out there that have lost or been lost. My beautiful flowers all of a sudden become really gorgeous and I do love them!


Overall this mother’s day I think that I really learnt that it truly is not about what gift you get. The type or size of the gift is in no way a reflection of how much we are appreciated. I realise that I’m so lucky to have a little son that showered me with kisses and hugs all day long. I felt loved and appreciated by all the little things that happened throughout the day. I
n the end it really is just another day however today I didn’t do the dishes, the washing or cooking instead I took the time to enjoy being mum. Playing games with our little man who means the world to me and I know I am his world to.

I could not have asked for a better day!

I am a mum of a beautiful little boy and am expecting a gorgeous little girl to join our little family in August.
